Have you ever had one of those mornings where you get up and you just want something delicious without much hassle. Something that can be whipped up without many ingredients and is incredibly kids friendly (sometimes overly so...).
I have my days when I just want a stack of pancakes with some butter, berries and maple syrup (lots of it). You can also try it out with nut butters, bananas and anything that will satisfy that craving.
Well if you're feeling the exact same way and have a crazy craving for some pancakes or waffles. We have just the thing for you. Our easy pancake recipe using Bob's Red Mill mix.
This recipe serves 2-3 but feel free to double it. No one is judging. Total cook time is 10-15 minutes
Ingredients:
- 1 cup Pancake/Waffle Mix
- 2/3 cup of cold water
Instructions:
1. Combine pancake/waffle mix with the water. Whisk it until it is a smooth consistency and there are no lumps.
2. Heat a pan over medium heat and lightly grease it with some butter or cooking oil. I like to brush it on or use a paper towel to coat the pan.
3. Pour ¼-cup portions of batter onto the greased pan. Let it form some bubbles at the top (about 1 minute) and then flip it. Let it cook for another 1-2 minutes and remove it from the pan. Add some butter on top (not critical but highly recommended).
4. Continue until batter is done. Serve immediately with your favourite toppings.
